    Each year Wilma would use the 1968 Australian Women’s Weekly recipe to make her puddings on Victoria Derby Day, the Saturday before Melbourne Cup. 

    On Derby Day 2015, and again on Derby Day every year from then on, Cam distilled some Christmas puddings (homemade to Wilma's recipe), putting them in the botanical basket of Wilma (the Four Pillars still) and distilling a base of juniper, cinnamon, star anise, coriander and angelica over the top.

    Equipment you'll need: Boston Shaker, Hawthorne Strainer, Mesh Strainer

    Essentials: Sugar Syrup (mix equal volumes of sugar and boiling water in a jug, cool before use). Egg White Shaker - either use the coil from a Hawthorne Strainer or a mixer ball from a blender bottle.

    Created by legendary British mixologist Dick Bradsell in 1984 when working at the infamous Fred's Club, the Bramble is a twist on the classic Gin Fix.

    > 40ml Rogue Society Gin
    > 15ml Gabriel Boudier Crème de Mures
    > 15ml Lemon juice
    > 10ml Sugar sryup
    > Fresh blackberries (or cranberries if not in season)
    > Lemon slice

    Assemble gin, lemon juice and sugar syrup in a rocks glass filled with crushed ice and stir. Pour over the Crème de Mures in a circular fashion. Garnish with two fresh blackberries (or cranberries if blackberries aren't in season) and a lemon slice.

    When Count Camillo Negroni asked for an Americano with an extra kick, the barman at the Caffe Casoni in Florence substituted soda water for gin.

    > 30ml Melbourne Gin Company
    > 30ml Campari
    > 30ml Dolin Rouge Vermouth
    > Orange peel slice slightly burnt

    Assemble ingredients in an ice filled mixing glass and stir briefly. Strain into an ice filled rocks glass and garnish with a burnt orange peel slice.
